Le 11 mars. Déjeuner à Brive – ‘En cuisine’ Lunch in Brive, at ‘En Cuisine’



Depuis notre retour nous avons reçu beaucoup de pluie, du vent, de la grêle.  Pas beaucoup de soleil.  Donc, comme nous avions un rendez-vous chez le garagiste, nous avons décidé de profiter du peu de soleil qui devait briller pour faire des commissions dans le centre, et, bien sûr, de déjeuner. J’ai trouvé un restaurant que nous ne connaissions pas dans le guide Michelin – En Cuisine.  A peu près 500metre du ‘périphérique’ de Brive, mais vaut le voyage, comme dit le guide.  Des saveurs tres intenses.

Since we got back it seems to have done nothing but rain here – with some hail, some wind, etc.  Not much sun.  So, as we had an appointment in Brive la Gaillarde, about 40 minutes away, to have the car looked at, we decided to do some errands in town, and, of course, to have lunch.  I found a new – to us – restaurant in the Micheline Guide, and we decided to try it.  About 500 metres from the actual downtown, but as the Guide says in such cases, ‘vaut le voyage’ – worth the trip. Really strong - and good - flavours.


Amuse-bouche  - pied de cochon, verrine de betteraves, mousse de hareng.  Plus une bouteille de Crozes Hermitage, Domaine les Hauts Chassis.
Amuse bouche, pig’s foot (much better than it sounds) with verrine of beetroot, herring mousse.
And a bottle of Crozes Hermitage, Domaine les Hauts Chassis.


Pour Harry – des œufs brouillés avec du foie gras.  
For Harry, scrambled eggs with foie gras. Nice way to eat his ‘soldiers’

Harry:

Foie gras de canard poêlé, mousseline de cresson, gaufre fumée au lard, tartare d’huitres.
Saute of foie gras, watercress mousse, smoked waffle, oyster ‘tartar’ (the only bit he didn’t like)
 Susan: 
La Pintade en suprême parfumée aux herbes, choux vert, cromesquis de champignons, jus de rôti.
Breast of Guinea fowl flavoured with herbs, cabbage, champignon croquette, cooking juice.
 Harry: 
Canard à la Royale, pomme truffée, carotte grille, échalote au vinaigre de myrtille, jus lie au sang.
Duck ‘Royale’ – with foie gras, truffled potatoes, grilled carrots, shallot in blueberry vinegar, sauce bound with blood.


 Harry:

Tarte chocolat caramel salé, sauce chocolat, cacahuètes caramélises sorbet fromage blanc. Moi, je n’avais plus de place.  (Attention à la petite touche – nous avons parlé de l’anniversaire de Harry, il y a quelques jours, et l’assiette est arrivée décorée.  De la classe !)
Chocolate tarte with salted caramel, chocolate sauce , caramelized peanuts and fromage blanc sorbet.  I couldn't eat any more.  Note the special touch - we had mentioned Harry's birthday a few days before, ad the plate arrived decorated.  Classy.


Et avec le café, des macarons et des sablés.  With coffee, macarons and cookies.


 Et partout en France, des policiers.  And, everywhere in France, police.
